Indian guest chef brings irresistible flavours of India to Cafe

Hyatt Regency Hong Kong, Sha Tin is pleased to welcome guest chef Sameer Ramesh Tendulkar, who will bring the authentic flavours of Indian cuisine and culinary culture to Cafe during the daily lunch and dinner buffets from 27 August to 16 September. 

Chef Sameer, Sous Chef of mezza 9 at Grand Hyatt Macau, has over 10 years' culinary experience in some of the most famous hotels and restaurants in Mumbai, including Taj President Mumbai and Hyatt Regency Mumbai.

During Chef Sameer's visit, he will combine the unique aroma of spices, sumptuous flavours of seasonal ingredients and traditional culinary techniques to create a delectable selection of authentic Indian favourites. For example, guests can try such classic appetisers as Dahi Wada - a popular northern Indian starter made with yoghurt tempered with sugar and cumin powder, and Tawa Aloo Chat - spicy young potato salad with a refreshing mix of pomegranate and coriander leaves.

In his line-up of dishes, Chef Sameer highlights a variety of perennial delicacies from different parts of India, including Malabar Prawn Curry from south-west India, which is cooked in aromatic spices and coconut milk; Vilayati Subzi - stir-fried assorted vegetables, herbs and spices northern Indian style; and the classic Chicken Biryani - boneless chicken in a creamy, spicy sauce of ginger, butter, saffron, yoghurt, coriander and mint leaves, alongside delicious basmati rice.

An exceptional Indian dining experience is never complete without enticing desserts, such as Gulab Jamun - an Indian version of donuts in warm, sweet milk syrup; Badam Ka Halwa - a nutty sponge cake with almonds, sugar and butter; and Shirkhand - strained cardamom-flavoured yogurt mixed with saffron.
