Sha Tin 18 welcomes new Chef de Cuisine Ngai Hong Kin, and introduces a new Dim Sum on the Terrace experience in this cool breezy season.
With over 30 years' culinary experience, Chef Ngai has dedicated his career to the development of authentic Cantonese cuisine.Having started at the early age of 12, Chef Ngai has made his mark in numerous renowned restaurants.On a number of occasions, he has been seconded to Asian cities such as Shanghai, Taipei and Tokyo, on a mission to start up Chinese restaurants and promote Cantonese fare.
In his new role as Chef de Cuisine at Sha Tin 18, Chef Ngai will continue the restaurant's success with homestyle Dongguan cuisine and local specialities. His debut includes traditional dim sum favourites such as Steamed scallop and shrimp dumplings with honey beans, Steamed beef dumplings with spring onion and oyster sauce, Steamed sesame paste and duck egg-yolk buns, a selection of steamed rice flour rolls prepared a-la-minute, Pan-fried turnip cakes with Dongguan preserved meat, and Sha Tin chicken congee.
With clear skies and cool breezy air in the Autumn season, guests can try the new Dim Sum on the Terrace experience, when they can embrace the beauty of the natural surroundings while enjoying Chef Ngai's delicacies over Chinese tea.
